When cooking dinner, many turn to beef or pork. But, another healthy option is bison meat. The Wisconsin Bison Producers Association is a network of Wisconsin ranchers and farmers raising bison that are trying to spread the word about serving healthy meat such as bison.
Andy Tenaglia, a chef with the Wisconsin Bison Producers Association is helping to run their booth at the Wisconsin State Fair and shares more about what the association is and how to properly prepare bison meat.
There are grass fed and grain fed bison, similar to beef. One key difference however is that it is hard to milk a bison. Bison is leaner than beef and may be a healthier choice if you’re looking to reduce your calorie or fat intake.
“It is a bit more pricey, but you’re getting more bang for your buck as you are getting leaner meat versus richer meat,” says Tenaglia.
Tenaglia’s main role at the booth is to help prepare the bison products and educate fairgoers on the diversity of meat in Wisconsin. They serve a sliced bison sandwich, creme brulee with buffalo milk, quiche with ground bison, and the fan favorite bison burrito.
Tenaglia adds that cooking bison meat is very similar to that of beef. However, with bison they had more fat to it rather than talking fat off like beef.
