Payne works in the Creative/Production Department here at Midwest Family Broadcasting. He recently visited JenEhr Farms in Sun Prarie with his family, and came home with some delicious goodies that turned into their dinner. Check out his recipes and photos below:
It was a meal all in itself, packed full of vitamins and protein.
First, sear two boneless, skinless, liberally salted and peppered, chicken breasts.
Once seared, add in the broccoli, cook at 400 degrees for eight minutes.
While cooking, make dressing out of olive oil, Dijon mustard, salt, pepper, lemon juice and honey.
Once chicken is cooked, remove from the pan and let rest for 5 minutes.
During the five minutes, add the chopped chard leaf to broccoli in pan, stir in with wooden spoon and cover.
It wilts to perfection in just 5 minutes.
Next, add in rice, quinoa, and chopped almonds to greens. Mix together.
Cut up chicken, place on mixture and pour on dressing.
Enjoy!
Take a few big, crisp leaves of romaine lettuce slathered in supremely spicy hummus and top with DiLusso deli meat and good ole Wisconsin cheese!
The cucumber salad was a nice side, and SUPER simple.
Sliced cucumbers bathed in salt, pepper, vinegar and minced, white onions.
