Earlier this year, 19 Wisconsin dairy companies received a DATCP Dairy Processor Grant. One of the grant recipients is a micro-dairy with plans for expansion.
Tammy Fritsch is the Plant Manager and Owner of Two Guernsey Girls Creamery in Freedom. She shares more about the micro-dairy and how she plans to use the grant dollars.
Fritsch plans to begin producing block cheese with the grant funding that Two Guernsey Girls Creamery has received. The creamery currently bottles milk and produces cheese curds. They also have an on-farm store that features a variety of local products.
Education plays a large role for Fritsch at Two Guernsey Girls Creamery. She says that visitors to the creamery have the opportunity to watch their milk travel through all stages of the production process. Fritsch hopes to continue to use the micro-dairy as an educational tool, especially through the funding provided by the Dairy Processor Grant.
