Wisconsin draws in cheesemakers and cheese fans far and wide between various attractions and competitions. For one cheesemaker, this pull to the dairy state ultimately led to co-ownership of his own Wisconsin creamery.
Ricardo Gutierrez is a co-owner of Door Artisan Creamery alongside Richard Stulginskis. Gutierrez previously helped operate his family’s creamery in Mexico City, Mexico. He shares more about Door Artisan Creamery, his journey to Wisconsin, and his plans for the DATCP Dairy Processor Grant funding they’ve received.
Gutierrez explains that the process for making cheese is different here in Wisconsin. He says that he now focuses on making aged cheeses, whereas most of the cheeses in Mexico were fresh.
As for the Dairy Processor Grant that Door Artisan Creamery received, they plan to put those dollars towards expanding the wholesale aspect of their business by increasing production.
Gutierrez also shares that educating visitors to the Door County area about cheese production is a major goal. He says that it is important for people to understand what all goes into cheesemaking, but that it all starts with good quality milk.
