Renovations on the Babcock Hall Dairy Plant and the Center for Dairy Research addition began back in 2019, and the end-date of the project is yet to be nailed down. Now, the project is anticipated to be completed early in 2023.
Casey Whyte, the plant manager, explains the difficulties that they’ve faced while undergoing construction.
According to Whyte, supply chain disruptions have made it difficult to source building materials. One example of a material that has been hard to acquire is freezer doors.
Although the plant is under construction, ice cream and cheese production have continued with the help of industry partners. Some of those partners are Madison Chocolate Shoppe, Chalet Cheese Co-Op ,and Edelweiss Creamery.
Whyte also shared that labor shortages have been a problem while keeping the facilities staffed during construction. Looking ahead, he says that they plan to expand staffing when the plant is reopened.
