Wondering how to support dairy farmers with a refreshment? Try Gelato!
Amber McComish, owner of Lucky Cow Coffee & Gelato, has a bit of everything for a morning run including Gelato, Coffee, and Baked Goods. Being a dairy farmer, McComish says, “We always wanted to incorporate our milk into a product.”
They recently bought a food trailer and it not only sells the product, but shares the family farm story. McComish pivoted to this direction since she says, “One of the biggest reasons is because our town is under construction this year.” This would be the time to begin a new adventure. McComish also says they, “Always wanted to do something different.” This was a unique way to still sell their products and McComish says, “Because our product was frozen, it can sometimes be hard to travel so we thought why not a trailer!”
This summer, Lucky Cow Coffee & Gelato have over 16 flavors including Brown Cow Brownie, Classic Cow Vanilla, and Highly Calf-Enaited. “Gelato is a frozen product a lot like ice cream” McComish says. If you’re looking for an in-between flavor between ice cream and custard McComish says, “It’s got the creaminess of custard, but it’s not as hard as ice cream.”
Not only is their gelato using dairy products, but coffee too. McComish says, “We use a lot of milk in coffee making. I didn’t really think about it that much until I started making coffee myself. A latte is 3/4 milk and a 1/4 expresso.”
This idea of making gelato wasn’t always the plan. McComish says, “We had actually wanted started making cheese as a farm.” They knew of many cheese makers already and wanted to differentiate themselves with a different dairy product. McComish says, “I had been making stuff at home and I was failing horribly” with trying to make yogurt and other dairy products, but nothing stuck until gelato. “I all of a sudden said I’m gong to make gelato and see how it goes and it turned out fantastic and it has just grown” McComish says.
McComish Farms have about 250 cows and are looking forward to one day use their own milk in their products. McComish says, “It’s been challenging, but we’ll get there.” They are hopeful for the future since McComish says, “We are really getting people access to so many different dairy products.”
