Years down the road when Americans look back at the COVID-19 crisis it will likely be images of pillaged grocery store shelves that come to mind. Anxious shoppers have stocked up on essentials in the midst of the outbreak, even “panic buying” at times. Items such as milk, ground beef, and toilet paper have been treated like bricks of gold as consumers scramble to get when they need prior to hunkering down.
One item that has become increasingly difficult to find is eggs. Nick Levendoski, President of the Wisconsin Poultry and Eggs Association and owner of Sunnyside Hatchery in Beaver Damn, says he has never seen demand like this. Despite that, Levendoski says the egg and poultry industry is prepared for increased demand as production recently hit an all time high.
