The local butcher shop is an institution as old as time. Generation after generation has flocked to their local market to get the freshest (and frankly, most delicious) cuts of meat they can find.
But, according to many national publications the locally owned butcher shop/meat market is becoming a rarity. The exact opposite seems to be the case after visiting with Nick Vorpagel, VP of Business Development for Lake Geneva Country Meats in Lake Geneva, Wisconsin.
There are concerns, of course, but the industry is far from being dead. In fact, the local butcher shop is alive and well.
