When you think about dairy products, you probably think about milk, yogurt, and cheese. All of these products need to be refrigerated. What if you could have dairy products you could store in your pantry? Within the Center for Dairy Research is the Beverage Innovation Center. They recently received grants to look into aseptic technology, which creates opportunities for non-refrigerated dairy products. John Lucey, director of the Center for Dairy Research spoke with us about this new opportunity.
