This time, it was Sara’s turn to enjoy our fresh veggies from JenEhr Farms. She works in the sales department here at Midwest Family Broadcasting. Her family put them all to good use, making everyday snacks and meals. Read about her experience below!
“We were very excited to get the vegetables. I have Gestational Diabetes, so we eat a lot of fresh vegetables and always try to find new ways to use them and get our daughter to eat them. So, the first thing we had to do was make Ants on a Log, yeah, I know, really fancy. But my daughter, Rossalyn, loved them and ate a whole bunch. She is getting more picky with food as she’s gotten older, so it was great to get her to eat some celery. Plus, it is a good snack for me with the diabetes.
I also made some baked breaded zucchini. Typically, we just grill or bake zucchini with some oil and a few spices. I decided to try adding some oil, grated parmesan cheese and some bread crumbs and baked them up. I had never done this before, but it is definitely my new favorite way to eat zucchini. I only wish that I had more of it to cook. Plus, I think we actually got Rossalyn to eat one.
I made a broccoli salad with the broccoli. It is difficult when pregnant to buy pre-made deli salads like potato salad, pasta salad, etc. because you never know if it’s been kept at the right temperature and if all the ingredients were handled properly. So, I thought I would make my own deli-type salad. It turned out delicious and even my husband thought it was delicious. He just wanted me to steam the broccoli, which is always good, but you can’t go wrong with adding cheese and bacon to something. I don’t tend to buy a lot of fresh broccoli from the store, as I seem to buy frozen broccoli. But there is a big difference in taste and quality. I think I’ll be buy fresh broccoli from now on.
We also eat A LOT of salads, this has been a staple for me with diabetes. It seems to be the best way for me to get full without going over my limit of carbs. So, I was very excited to get a bunch of lettuce. Plus, oddly, my daughter absolutely loves lettuce. She’ll eat it plain or in a salad. The lettuce was delicious and so fresh. We didn’t really get creative with it and just made plain old salads, but I know dark green lettuce is the healthiest and this was so good.
We also eat a good amount of burgers and turkey burgers, so we sliced up the tomatoes and onion for those sandwiches. I’ve really found that there is a HUGE difference in the quality of tomatoes that you can find. These tomatoes were amazing, I could just eat plain old slices of them … very juicy and sweet.”
